Lenten chebureks with potatoes

Description

The pastry is prepared simply and quickly. Vegan chebureks with potatoes are an excellent substitute for the classic meat recipe. The potato filling pairs well with the crispy dough, and the dish turns out just as good as with minced meat. I suggest making the dough with water; the chebureks will be thin and have bubbles. They can be served with tea or coffee.

    Prepare the ingredients for making Lenten potato chebureks.

    Sift half of the wheat flour portion into a deep bowl.

    Add salt to the flour and mix.

    Mix the dough until all lumps disappear. All the water has been absorbed into the dough, but it is still sticky.

    Knead a firm and elastic dough, let it rest under a towel for 20–25 minutes.

    Meanwhile, boil the peeled potatoes and mash them with a masher, adding a couple of spoonfuls of the potato cooking water so that the filling becomes softer.
