Vegan poppy seed buns

Description

The pastry is simple and quick to prepare. For making these vegan poppy seed buns, I recommend using vegan yeast dough. If you'd like to make the dough yourself, you can follow a recipe from the website. This dough is even easier to prepare than enriched yeast dough with eggs: just water, flour, yeast, sugar, salt, and a little vegetable oil. I don't soak the poppy seeds—I use them dry.

    You can make simple yeast dough yourself (there's a good recipe available on the website) or buy ready-made unleavened yeast dough. I've tried both ways, and there's not much difference. The main thing is that the dough rises properly, otherwise the buns won't be fluffy.

    For the filling: mix dry poppy seeds with sugar and grind them. This can be done using a coffee grinder or blender. Then add boiling water (3 tablespoons) to the mixture and stir well.

    Separate small pieces of dough, roll them out, and place 1.5–2 teaspoons of filling on top. Carefully seal the buns.

    Line a baking sheet with parchment paper and place the buns on it (seam side down). Brush with water, then sprinkle with sesame seeds or poppy seeds, and spray with water again (this way the seeds won't fall off).

    Let the buns rise for about 30 minutes; they may increase in size, don't worry. Then place them in a preheated oven at 180 degrees for 35 minutes.
