
Lenten buns
Description
This day falls during the fast, so the buns are made as fasting buns. They can be served with tea or coffee.

Step 1

1. Prepare the starter. For this, put the yeast, a little sugar and a little flour into warm boiled water, 1.5 cups. Mix everything and let it sit for 15‑20 minutes until the starter rises. Sift the flour into a large bowl and add the turmeric and vanilla. Then pour in the starter, sugar and salt. Now knead the dough until it becomes elastic. Roll it up and place it in a warm spot. Let it rest for about an hour.

2. During this time the dough should double in size. Cut it into 40 equal pieces. Roll each piece of dough into 15 cm strips.

3. Now we will shape larks from the dough. Tie each strip with a “knot”. Where the head will be, form the beak. On the other side make two‑three cuts with a knife; this will be the tail. We’ll make the eyes of our birds with raisins.

4. On a butter‑greased sheet, place our birds so that they “rise”. Then brush them with strong black tea mixed with sugar. Bake the buns at 180 °C for about 30 minutes. Sprinkle the finished buns with water and cover with a napkin for about 10 minutes.
