Vegan pancakes on sourdough starter

Description

The baking is simple and quick. Lenten pancakes turn out wonderfully using different types of fermented starters. You can even use brines, just make sure they don't make the dough too sour. If the fast isn't strict, whey works well too. Generally speaking, in my opinion, the simpler the ingredients for pancakes, the more enjoyable it is to make them.

    For our vegan pancakes, we'll use one secret ingredient. My mom gave me this tip. Boil potatoes in their skins. Then strain and cool this potato water. The thing is, potatoes are a source of starch, which helps create elasticity. This way, we've replaced eggs with potato cooking water.

    Now, separately about the starter. For those who don't know, here's how to prepare it. Take 50 g of wheat or rye flour. Rye flour produces a more sour dough, but the starter itself is more low-maintenance. Mix it with 50 g of water and stir. This process needs to be repeated for a week. Every day, add 50 g of water and 50 g of flour to the starter and mix well. Keep it in a dark place at room temperature. Set aside 100 g of the finished starter.

    Dissolve the starter culture in the cooled broth. Gradually sift in the flour and mix the consistency. Add sugar, salt, and a few tablespoons of sunflower oil. Whisk with a whisk (or mixer) and let it sit in a warm place for about eight hours.

    Now watch for bubbles to appear. The dough may rise slightly. This means you need to add more potato broth or simply water. The consistency should be as thin as that used for baking regular fluffy pancakes. Otherwise, you'll end up with pancakes. Pour a ladle of liquid batter onto a hot skillet. Bubbles will begin to appear through the pancake. This is the action of the starter.

    So, one pancake after another, we've fried up quite a stack. If it weren't for the fasting period, I would've topped them with butter. But as it is—we'll have to do without! On the bright side, they're perfect for rolling up with jam, honey, or zucchini caviar.
