Vegan pancakes with sparkling water

Description

Homemade treats for tea. If you plan to fill the pancakes, do so while they are still warm and pliable. Serve the fasting pancakes hot or warm, enhancing their flavor with vegetable, fruit, or other fillings, as well as syrups, jams, nuts, or any other sweet and savory toppings. Serve warm or chilled. Perfect with tea.

    Using a fine sieve, sift the flour into a large bowl, then add sugar and salt to it.

    Pour the mineral water into a separate, clean, and dry container. Gradually add the flour, not all at once, otherwise it will form lumps. For easier dough mixing, you can use a mixer operating at low speed. Once the dough reaches a smooth, creamy consistency, cover it with plastic wrap or a lid and let it rest for half an hour.

    After 25 minutes, prepare the vegetable oil for the dough. Take a small saucepan, pour 5 tablespoons of oil into it. Wait just a couple of minutes until it heats up well, then remove from heat and slowly pour it into the dough in a thin stream, stirring constantly with a mixer. Now beat the dough at maximum speed for 1–2 minutes—your batter is ready for frying!

    There's no need to use vegetable oil for frying, as the batter already contains it. Simply place a frying pan on the stove and wait until it becomes hot. Then, using a ladle, pour in the batter. Quickly lift the pan, swirl it in circular motions to spread the batter evenly over the bottom, and return the pan to the stove. The mineral water-based pancakes cook quite quickly, so as soon as the edges turn slightly brown, flip the pancake and remove it from the pan just a few seconds later.

    The pancakes turn out very light, beautiful, and even lacy; this effect is achieved thanks to the large amount of gas in the mineral water.
