
Lenten Oat Cookies

1. Prepare the spices, water, vegetable oil, and flour. Use quick-cooking oats. You will also need a blender. Let’s get started!

2. Measure out the required amount of flakes (about 2 cups) and grind them in a blender.

3. You should end up with something almost like flour, but with a slightly coarser grain.

4. Transfer the ground flakes into a deep, convenient bowl. Add sugar, baking powder, and the spice mix. Use as much spice as you like; I use roughly the amounts given in the description, but all spoonfuls are level, not heaped!

5. Pour in the water and vegetable oil. Mix well.

6. Add the flour at the very end and mix the cookie dough thoroughly again.

7. The dough is ready! It is pliable and pleasant to work with and does not stick to your hands.

8. Divide the dough into pieces, roll into balls, and flatten them into an oval shape. Place on foil and parchment paper. Preheat the oven to 200°C.

9. Bake the cookies for about 20 minutes. Remove from the oven, let cool, and serve.
