
Lenten banana cookies
Description
Delicious baked goods for the whole family. The amount of sugar can be reduced a bit, but then the cookies will be less crunchy. You can add nuts, dried fruits, or poppy seeds to the dough.

Prepare the necessary ingredients.

Preheat the oven to 200 degrees. Peel the bananas and mash them into a coarse puree, drizzling with lemon juice and sprinkling with sugar.

Add vegetable oil and cinnamon. Mix.

Add the sifted flour with baking soda and mix the dough with a spatula or a mixer on low speed.

The dough will become quite thick and will visibly start to “fluff up” due to the reaction of baking soda and acid.

Quickly divide the dough using two tablespoons and immediately place it in the preheated oven. The faster everything is done, the more tender and airy the cookies will turn out.

Bake the cookies for about 10 minutes until golden brown. Then reduce the heat to 180 °C and bake for another 5 minutes so the cookies are fully cooked inside. Adjust according to your oven. Let the finished cookies cool on a rack.
