
Vegan semolina casserole
Description
The recipe won't take much time. Semolina puddings can be made with cottage cheese—they're incredibly delicious. But during fasting periods, we have to do without cheese. That's why I prepare a fasting semolina pudding with a filling of dried fruits and nuts. By the way, frozen or fresh cherries, as well as apples, also work great as fillings. To make the pudding more vibrant and tasty, add cocoa powder for color. The baked dish is ready. Serve at the table.

Prepare all the ingredients.

Mix the semolina, vanilla sugar, and regular sugar. Pour water over the mixture to let the semolina swell, for about two to three hours.

Once the semolina has swollen, stir it and pour in the vegetable oil, then mix again with a whisk. Then add the cocoa powder (you can sift it to avoid lumps) and mix thoroughly once more.

Sift the flour and add it to the main mixture. Also add the baking powder. Knead a thick (but not too thick) dough that slowly drips off the spoon.

Now prepare the filling: rinse and dry the dried fruits, cut the prunes into medium pieces, and chop the nuts (you can also pulse them in a blender, but not into powder). If desired, you can add raisins. Add the filling to the batter. Then grease the baking form (or the multicooker bowl) with vegetable oil and pour the batter into it. You can either cook it in "Baking" mode for 65 minutes, or bake in a preheated oven at 190 degrees Celsius for about 40 minutes (I always check doneness with a toothpick, it might need a little longer).

Let the ready-made vegan semolina pudding cool down, you can sprinkle it with powdered sugar or decorate it with dried fruits.
