
Vegan Charlotte in a Multicooker
Description
The pastry is simple and quick to prepare. We're all used to the idea that Charlotte is a quick fruit pie. You know, when in summer at the cottage there's no room left for all the apples, all the compotes are already made, jam is canned, dried fruit is stored, but the apples just keep coming... So you end up baking. The pastry is ready. Serve at the table.

For a vegan charlotte, we will need regular wheat flour. Of course, without eggs it won't rise on its own. And fluffiness is the most important thing in this sweet pie. So, sift the flour.

I usually prepare sponge cake in half an hour. But this time, we'll have to wait. I'll spend more time, but the dough will stay fluffy. For this, we'll need yeast. French yeast rises much faster, so I use it, dissolving it in warm water. Then I add it to flour together with sugar and vanilla. We should get a sticky consistency, like batter for pancakes. I place it in a warm spot, covered with a towel, for 2–3 hours.

Meanwhile, let's cut the apples. Both sweet and sour varieties will work. I slice them into pieces and remove the core. Cut them into nice wedges and cover with a bag to prevent them from drying out.

After the time has passed, take out the dough. It has risen well, as it was standing near the radiator. Take the multicooker pot and grease the bottom with vegetable oil. Place apple slices first, sprinkle with sugar. Pour the batter on top. Set the multicooker to the "Baking" mode and cook for one and a half hours.

After the allotted time, open the multicooker. If you feel that the cake needs more baking, leave it for another 15–20 minutes—this sometimes happens when the apples are very juicy. Remove the cake and flip it upside down so that the apples end up on top. You can sprinkle them with cinnamon or powdered sugar to taste. Enjoy your tea time!
