
Lean samsa with pumpkin
Description
Delicious pastries for the whole family. Making this samsa will of course take some effort, but in the end you’ll get hearty, tasty, and juicy turnovers with thin dough and a filling that really satisfies. The filling can be very varied: pumpkin, potato, mushrooms, cabbage, and so on.

Prepare all ingredients.

In a deep bowl, combine water, oil, and salt.

Gradually add the flour.

Knead a soft dough that does not stick to your hands. Cover it with a towel and let it rest for 20–30 minutes.

Combine the diced potato and onion. Add 2–3 tbsp vegetable oil, salt and spices to taste. Mix. The first filling is ready.

In another bowl, combine diced pumpkin and onion, add vegetable oil, salt, and spices to taste. This will be our second filling.

Divide the dough into 8–10 portions. Roll each piece into a circle and place the filling in the centre. Use a generous amount of filling, since it reduces slightly during baking.

Shape the samsa.

Transfer the prepared pieces to a baking sheet lined with parchment. Brush the tops with vegetable oil or sweet glaze and bake in the oven at 180 degrees for about 30 minutes.

Lightly spray the cooked lean samsa with cold water, cover with a towel, and let rest for 10–15 minutes, then serve at the table.
