
Lenten macaroni casserole
Description
Tasty baked dish for the whole family. For preparing this casserole you can use any mix of frozen vegetables, fresh vegetables that you have in the fridge, any mushrooms. If you are making a non‑vegetarian dish, you can also add sautéed ground meat or pieces of meat, but that’s a completely different story. Today I offer you the recipe, serve it cooled or slightly warm.

Prepare all the necessary ingredients. Clean the mushrooms and cut them into pieces.

Bring the water to a boil with a small amount of salt, add the pasta and cook according to the instructions on the package.

Slightly thaw the vegetables so that large pieces can be cut. Place the vegetables in a skillet with 1 tbsp vegetable oil and cook for a few minutes until the vegetables are thawed and become slightly soft.

Now add the mushrooms to the pan, season with salt to taste, and cook until all the vegetables are done.

Do not overcook the vegetables; they should retain their shape and preserve their color as much as possible – this will make the casserole more appetizing.

While we were sautéing the vegetables, the pasta cooked. Drain it in a colander and rinse with cold water.

Mix the pasta with the vegetable mixture in a baking dish. You can stir everything together, or you can layer it – whichever you prefer.

Let's make the sauce. Heat vegetable oil in a pan, add flour to it and stir vigorously. Keep it on low heat for about 2 minutes, until the flour turns golden.

Meanwhile, dissolve the bouillon cube in 2 cups of boiling water.

Pour the broth into the pan, stir, add the spices, and cook until the sauce thickens.
