
Lenten Caviar from Nori
Description
Suitable for both holidays and everyday meals. For this appetizer, semolina with fiber is preferable — the caviar will be crumbly and very nutritious. If that type of groats is unavailable, regular semolina works; it won't affect the caviar's flavor. The appetizer is ready. Serve immediately.

Prepare the necessary ingredients, keeping in mind that instead of tomato juice you can use fresh tomatoes blended in a blender.

Bring the water to a boil and pour it over the nori sheets, previously torn into pieces. Let the seaweed steep for 3-5 minutes.

Pour the tomato juice into a saucepan or pot, add salt and sunflower oil, and stir.

Grind the nori with water in a blender, pour into a saucepan with tomato purée, and mix.

Add the semolina to the resulting puree-like mixture, stir, and place the saucepan over low heat.

Cook the semolina until thickened (3–5 minutes), stirring with a wooden spoon or spatula. Remove from the heat and let cool.

Serve the finished nori caviar with toast or crackers alongside first courses or on its own.
