
Vegan pea porridge
Description
The dish is prepared without unnecessary complications. Pea porridge is very tasty and nutritious, but the cooking time often discourages cooks. However, if you add a little baking soda while cooking, the peas will lose their density faster and become soft. The main thing is not to overdo it with the soda, otherwise the porridge will taste bitter. The ready dish can be served at the table.

Prepare the listed ingredients. Use dried peas.

Rinse the peas several times in water in the evening or in the morning, then pour boiling water over them and leave to soak for 3-4 hours, or preferably overnight.

Then rinse and pour into a cauldron or a pan with a non-stick bottom. Add 400 ml of water, bring to a boil and cook for about 20 minutes. Then add a couple of pinches of baking soda, reducing the heat to the minimum. A thick foam will immediately form, so stir the porridge. Cook for another 10 minutes, then drain the liquid. Pour in 400 ml of boiling water, add salt and bay leaves. Cook the pea porridge for another 50–60 minutes over the lowest heat.

Once the peas are cooked, the porridge is ready. Taste it and, if necessary, season to taste. You can press a clove of garlic into the hot porridge, after peeling and rinsing it.

Place the lean pea porridge on plates, sprinkle with fresh herbs, and serve.
