
Vegan Banana Cake in a Multicooker
Description
You can make fluffy sweet dough without eggs. Even during fasting periods, you can manage to bake a delicious, airy cake. The softness comes from banana puree, and the gas in the water helps the dough rise during baking. Serve it cooled or slightly warm.

First, let's deal with the bananas. They will replace eggs, as they also have binding properties. Mash the banana pieces with a fork or potato masher.

Sift the flour. Mix it with baking powder, vanilla, a pinch of salt, and sugar. Combine sunflower oil with sparkling water, mix with the flour, thoroughly rubbing out lumps with a fork. Finally, add banana puree and nuts. Knead the dough.

Take the multicooker bowl, grease the sides and bottom with vegetable oil. Pour in the batter, down to the last drop. Set to bake the gingerbread in "Baking" mode for one and a half hours.

When the multicooker signals, you can open it and take out our gingerbread cake. The soda made it fluffy, as if we'd added eggs! Dust the top with powdered sugar.
