
Salting Frozen Mackerel

Prepare the listed ingredients. Buy the mackerel frozen; there is no need to thaw the fish.

Mix salt, sugar, and ground black pepper in a separate container. Crumble the bay leaves in your hands and add them to the container.

Gut the mackerel and remove the black membrane inside the belly. Cut off the head, tail, and fins. Cut into portion-sized pieces and place in a deep container.

Coat each piece in spices and cover the container with plastic wrap, leaving an opening for air. Place the container in the refrigerator for 2 days. Turn the pieces over every day for even salting.
