
Corn and Onion Popovers
Description
Homemade baked goods for tea. Popovers are hollow inside buns. They can make a wonderful snack. This recipe will yield 6 to 9 buns, depending on the size of your pan. Serve warm or cooled. Perfect with tea.

1. Mix buttermilk and corn kernels together in a blender for 3 seconds, so that the corn is slightly crushed but still not turned into a puree.

2. Add eggs, 1 tablespoon of ghee, and beat for another 1 second. Add flour, corn flour, sugar, salt, a few pinches of ground black pepper, and chopped green onions. Mix once more until all ingredients combine into a smooth, uniform mixture. Let the dough rest for about 15 minutes.

3. Meanwhile, preheat the oven to 175 degrees. Grease the muffin tin with the remaining 1 tablespoon of butter. Fill each cup of the tin with batter just over half full.

4. Bake the popovers in the oven for 30 to 35 minutes. Do not open the oven door during baking!

5. Popovers are ready when they become tall and golden brown.

6. Place the popovers on a rack to cool and let them cool for several minutes. Be careful—even when the rolls feel cool on the outside, they may still be very hot inside!
