Childhood cottage cheese donuts

Description

The recipe will not take much time. Choose cottage cheese with the highest fat content you can get; I use 9%. I use baking soda slaked with vinegar; if you like, substitute 1/2 tsp baking powder. It is important that the oil be neutral in smell (i.e. refined) and that there be enough of it so the doughnuts are completely covered while frying. Serve cooled or slightly warm.

    Prepare all the necessary ingredients.

    Place all the cottage cheese in a bowl, add the eggs, sugar, and salt.

    Mix all these ingredients vigorously; you can also blend them with an immersion blender.

    Sift the flour into the cottage cheese mixture and add the baking soda slaked with vinegar.

    Knead a soft dough; it should barely stick to your hands.

    From this dough, roll a log and cut it into equal pieces, then roll each piece into a ball. Each ball weighs 23–25 g for me.

    In a sauté pan, heat deep-frying oil over medium heat (or even slightly below medium). Place balls of cottage cheese dough into the hot oil in small batches. Fry the donut balls until they are an appetizing golden brown. Transfer the cooked donuts to paper towels to absorb excess oil.

    Serve the cottage cheese doughnuts at the table, lightly dusted with powdered sugar.
