Description

Perfect with tea and coffee. I found the recipe for blackcurrant-filled doughnuts in a cookbook, and it was so delicious and quickly became a family favorite that, despite being quite indulgent, I added it to my personal recipe notebook. I prepare classic yeast dough for the doughnuts, but with a little twist—adding vibrant spices: cinnamon, cloves, cardamom, and nutmeg. The doughnuts turn out wonderfully aromatic, with interesting spicy notes. For the filling, you can use either fresh blackcurrant berries or preserved blackcurrant. Give it a try! Serve warm or chilled. Perfect with tea.

    Mix flour, yeast, sugar, butter, and spices in a deep bowl.

    Add the warm milk and knead a firm, elastic dough. Cover it with plastic wrap and let it rise for 1 hour.

    When the dough has risen, divide it into pieces of about 40 grams each. Flatten each piece into a small round, and place currants in the center.

    Pinch the edges and roll into smooth balls. Place them on a baking sheet and let rise for 45 minutes.

    Heat vegetable oil in a deep fryer or deep pot until it is almost boiling. Place the doughnuts into the hot oil and fry until golden brown, about 5–7 minutes.

    Remove the donuts, place them on a colander or paper towel to drain excess oil. Sprinkle the donuts with powdered sugar and serve.
