Prepare all the ingredients.

Wash all the tomatoes and pat dry.

Remove the stems from large tomatoes and cut into thick slices. Transfer to a heavy-bottomed pot and cover with a lid.

Cook them over medium heat until the tomatoes release their juice and soften.

Blend the tomatoes in a blender until pureed.

Strain through a sieve to remove the skins and seeds.

Pour the resulting juice into a heavy-bottomed saucepan. Add the salt and sugar. Bring to a boil and simmer over low heat for 15 minutes. Stir in the citric acid at the end.

Meanwhile, place the small tomatoes into a clean sterilized jar.

Pour in hot water.

Cover with a lid and leave for 20 minutes.
