
Tomatoes in jars for winter
Description
A preservation recipe without unnecessary complications. There are no exact proportions for the recipe (you can add various ingredients at your discretion), but there is an exact proportion for the marinade. Serve at the table or store in the pantry.

Step 1

Wash the tomatoes and remove the stems. Let them drain. Do not can bruised or cracked tomatoes.

The jar should be sterilized. Place a sprig of dill (flowers are fine) and a sprig of tarragon (also called estragon) at the bottom of the jar. If you cannot find these herbs fresh, use dried ones. Estragon and dill are sold in packets at stores. Dried herbs work as well. You can also add oregano to the jar.

Fill half the jar with tomatoes. Slice the bell pepper and add it to the jar as well. Also add a couple of minced garlic cloves to the jar.

Fill the jar to the brim with tomatoes.

Prepare the marinade. To 3 liters of boiling water, add 2 tablespoons of salt and 8 tablespoons of sugar. Bring to a boil. Pour the resulting marinade into the jars. Do not discard the leftover brine: you will need it again. Cover the jars with lids and let them stand (without sealing). Pour the brine back into the pot. Bring to a boil. Add 2–3 tablespoons of vinegar to the boiling brine. Remove the brine from the heat and pour it into the jars again. Seal the jars and turn them upside down. Wrap them. After the jars have cooled, return them to an upright position. Store in the cellar until the moment of truth. These tomatoes are especially delicious served chilled.
