
Tomatoes with Garlic for Winter

1. Prepare everything according to the list: tomatoes and everything for the brine. Wash the jars and lids and scald them with boiling water. Wash the tomatoes thoroughly.

2. Pack the tomatoes tightly into clean, prepared jars.

3. Bring the water to a boil. Pour hot water into the jars, cover with sterile lids, and let stand for 10 minutes. If a tomato or two sticks out, that’s fine—in 10 minutes the tomatoes will settle a bit.

4. Drain the water from the tomatoes, measure the amount according to my proportions, add salt and sugar, bring to a boil, and pour in the vinegar. Peel the garlic and press it through a garlic press, or use a fine grater. Put one dessert spoonful into each jar.

5. Fill the jars with hot brine.

6. Screw on the lids or seal with a canning key. Turn upside down until completely cooled. Then store in a cool place.
