
Korean-style Tomatoes
Description
Perfect for winter pantry stock. For this preserve you can use both red and green tomatoes. Red tomatoes should be firm. Red pepper (powder) works here whether sweet or hot. You can make different jars—some sweet, some spicy. Just label them somehow so you don’t mix them up (and don’t serve your mother-in-law the spicy jar, though…). Store in a cool, dark place.

1. Wash the tomatoes, remove the stems, and slice into medium-thick rounds.

2. Wash the parsley and dill and chop them finely.

3. Cut the bell pepper in half, remove the seeds and membranes, and slice into half-rings.

4. Peel the garlic and slice it into thin slices.

5. Gently mix all the ingredients (diced tomatoes, parsley, dill, pepper, and garlic) with the vinegar, vegetable oil, salt, sugar, and red pepper in a large bowl.

6. Prepare clean jars and spoon the resulting mixture into them. Seal the jars with polyethylene lids and place them in the refrigerator. You can enjoy Korean-style tomatoes as early as the next morning, or keep them in the refrigerator until any holiday. Or perhaps you'll happily eat them without a special occasion, nibbling on bread alongside. This appetizer can also be prepared for New Year's.
