Lightly Salted Tomatoes in a Pressure Cooker

Description

Suitable for both holidays and everyday meals. You can make lightly salted tomatoes in a pressure cooker for any feast or simply as a cold appetizer for a family dinner with meat or potatoes. The appetizer turns out tangy and very tasty, and you can prepare it without much fuss. It doesn’t keep for very long, but it disappears in no time. You can serve it warm or chilled.

    Prepare all the ingredients.

    Rinse the tomatoes in cold water.

    Cut each tomato in half, then slice into wedges as shown in the photo.

    Place some of the herbs at the bottom of the pot. I used dill umbels, parsley, raspberry leaves, and currant leaves.

    Place half of the tomatoes, sliced into wedges, on top.

    Place another portion of the herbs on the tomatoes and add roughly chopped garlic cloves.

    As the next layer, arrange the remaining tomatoes.

    Place the herbs, bay leaf, and peppercorns on top.

    In a separate container, prepare the brine. To do this, dissolve the salt and sugar in warm water. Add the vinegar and taste the brine. If any ingredient is lacking, add more. Pour the prepared brine over the tomatoes in the pot.

    To keep the tomatoes with herbs from floating to the surface, cover them with a flat plate on top. Leave the tomatoes to marinate at room temperature for 5 hours. Then refrigerate for another 1 hour.
