Icing for Easter kulich

Description

This glaze for Easter cake is simply the perfect option for me, because it just can’t fail. If you want to diversify this glaze with color, you can add natural food colorings. For example, a little turmeric, blackcurrant juice, or spinach. The bake is ready. Serve at the table.

    Prepare the ingredients and make the kulich itself.

    In warm milk, dissolve the yeast and 1 tbsp of sugar, stir, and let sit for 10–15 minutes so the yeast begins to work.

    When a fluffy yeast cap appears on the surface, add the beaten eggs with sugar and vanilla sugar, as well as melted vegetable oil, to the bowl. Mix.

    Gradually add sifted flour and knead a soft and tender dough. At this same stage, add raisins, candied fruit, or dried apricots to the dough.

    Transfer the ready dough to a large bowl, cover it with a clean towel, and place it in a warm spot for 1 hour to rise. Then knead the dough again and let it rest for another 30–40 minutes.

    When the dough has tripled in size, you can begin shaping the kulich.

    For baking kulichs with this recipe you can use any pans—metal, non‑stick, or paper. I use paper pans; they are the easiest to work with. Fill each pan with dough so that it occupies about one‑third of the pan’s total volume. Then let the pans rest for 15–20 minutes so the dough rises slightly, and only then place them in a pre‑heated oven at 170–180 °C for 30–50 minutes, depending on the size of the pans.

    While the kulich are baking, let's prepare the icing. We'll need 1 egg white, about 2/3 cup of sugar, and 1 tbsp lemon juice.

    Mix all these ingredients in a mixing glass, first with a fork, then beat them with a mixer.

    If you use powdered sugar, you can beat it for a very short time, but with granulated sugar, it will take longer. In just 5–7 minutes you’ll have an excellent icing for kulich.

    When the kulichs have cooled, cover them with icing.

    Glaze the kulich with icing and decorate with powdered sugar.
