
Poltava Verguny

Prepare all the ingredients.

In a deep bowl, combine kefir, egg, sugar, vanillin, and salt.

Stir. Add flour and baking soda.

Knead a soft dough that does not stick to your hands. Shape it into a ball, cover with a towel, and leave it for 20 minutes.

Grease the work surface and rolling pin with vegetable oil. Divide the dough into 2 parts and roll out each part in turn into a rectangle, about 7–8 mm thick. Cut the dough into strips, approximately 3x6 cm. In the middle of each resulting strip, make a slit as in the photo.

Shape the verguns by turning one end of each strip once through the slit.

Heat the oil well. I fry verguny in a small saucepan; those who have a deep fryer can use it. Carefully lower the Poltava verguny into the hot oil and fry until golden brown. Place the finished verguny on a paper towel to remove excess oil.

Serve the finished Poltava verguny to the table, dusting them with powdered sugar.
