Description

Homemade baking for tea. Polish gingerbread cookies “Katarzynki” are easy to make and fairly quick. The step-by-step recipe explains in detail how to do it. A few things to keep in mind: the honey must be liquid—if it has thickened, melt it so the gingerbread doesn’t turn out hard. Don’t roll the dough too thin, and don’t overbake it longer than the time given in the recipe. Serve warm or chilled. Perfect with tea.

    Prepare the ingredients.

    Mix the honey and confectioners’ sugar; beat in the egg. Grate the orange zest.

    Mix the flour, baking powder, cocoa, and all spices.

    Add the dry flour mixture with spices to the honey mixture and knead the dough. It will be quite dense and stiff. Wrap the dough in plastic wrap and let it “rest” for 20–30 minutes.

    Roll the dough into a sheet about 0.8–1 cm thick. It works best to do this between two layers of plastic wrap. Cut out the gingerbread with cookie cutters and place them on a baking sheet.

    Bake the gingerbread in a preheated oven at 180°C for no more than 12–13 minutes; that is enough. Remove the gingerbread from the baking sheet immediately.

    Gingerbread cookies can be dusted with powdered sugar, coated with chocolate glaze, or decorated with icing. To make it, mix powdered sugar, egg white, and 0.5 teaspoon of lemon juice.

    Make a well in the powdered sugar and pour in the egg white and lemon juice.

    Mix and beat on low speed. Transfer the icing into a disposable piping bag and make a small cut in the bag.

    Decorate the gingerbread cookies with icing. It dries fairly quickly.
