
Striped Easter cake
Description
With this recipe for striped paskha, you'll be fully prepared for the holiday, as the festive table would be incomplete without such a delicious dessert. Essentially, the method of making striped paskha is almost no different from the classic version, but to make our paskha even more delicious and beautiful, we'll add some fresh berries. I used blueberries, but of course you can choose any berries you prefer. And since the holiday is just around the corner, it's time to start preparing—my simple striped paskha recipe with photos will help make this joyful day even brighter.

First, we need to rub the cottage cheese to make it softer and fluffier. A sieve works best for this.

Next, we take a deep bowl and place it on top of a pot with boiling water. Now, we add our egg yolks to this bowl and mix in 60 grams of sugar.

Beat the yolks with sugar using a whisk until the mixture begins to turn pale. And when the mixture starts to thicken, remove the bowl from the saucepan.

Now we add the butter to the yolk-sugar mixture and mix thoroughly until smooth.

Transfer the prepared mixture to the cottage cheese and mix thoroughly.

In a separate saucepan, we place the blueberries, add lemon zest and juice, 60 grams of sugar, and cook for 2-3 minutes.

Next, we need to divide the cottage cheese mixture into two parts. Into one part, we add the blueberries and a tablespoon of sour cream.

And to the other, we add three tablespoons of sour cream, vanilla, and chopped almonds.

Thoroughly mix all ingredients in separate bowls until smooth.

Now line the Easter mold with cheesecloth and begin layering the mixture in turn. Each layer should be firmly pressed down. Then refrigerate the paskha overnight; in the morning, remove it from the mold, take off the cheesecloth, decorate with almonds, and serve.
