
Healthy cottage cheese vatrushki
Description
The pastries come together simply and quickly. Oat-dough vatrushka pastries are perfect for breakfast before work or school; you can take them on a trip, to a picnic, or as a snack. The dish turns out not only delicious but also very filling, fragrant, and appetizing. Serve them cooled or slightly warm.

Prepare the listed ingredients.

Grind quick-cooking oats in a blender jar until they are almost flour—fine crumbs.

Transfer them to a deep bowl, crack in a chicken egg, and add granulated sugar and salt.

Place the cottage cheese; preferably use a high-fat product.

Thoroughly knead the oat–cottage cheese dough.

In another bowl, combine the remaining cottage cheese, egg white, sugar, salt, and sour cream of any fat content. Knead the filling thoroughly. Set the yolk aside—you will use it to brush the edges of the vatrushki when they are almost baked.

Grease the baking sheet or parchment paper with butter. Divide the oat dough into equal parts and roll each portion between your hands into a ball. Moisten your hands with water for this step. Flatten each dough ball on the baking sheet and shape into flat rounds with raised edges.

Spoon the cottage cheese filling into the indentations. Preheat the oven to 200 degrees and place the baking sheet inside. Bake for about 20–25 minutes. Then remove and brush the edges of the dough with the reserved egg yolk. Bake for another 1–2 minutes.
