A friend from Belarus once told me this recipe for preparing aspen boletes for winter—in their family of mushroom pickers, they preserve tube-bearing mushrooms exactly this way. And I think you can trust people with experience, so I’m sharing how to make aspen boletes for winter. The preserve is ready for winter storage.

1. Sort through the mushrooms carefully and wash them gently.

2. Heat the vegetable oil and sauté the mushrooms for about forty minutes. Use medium or very low heat, depending on how browned you want them.

3. Be sure to stir the mushrooms periodically, but do not add salt. Transfer the finished mushroom mixture into prepared sterile jars.

4. Bring the water to a boil with salt and acid, then pour it over the mushrooms in the jars. Seal for winter storage — done!
