Pork Gravy
Description
To prepare the sauce, choose a cut of pork with a layer of fat to make the dish juicy and velvety in texture. You can add carrots, tomatoes, tomato sauce, etc. The sauce gets its rich color from the seared meat, so first the meat is fried, then stewed in its own juices and fried again. Only after that do you add water or broth.
Instructions
- 1
Step 1

Prepare the listed ingredients. Rinse the pork in water, remove the tendons and membranes. Peel the onion, rinse it.
- 2
Step 2

Dice the onion finely. Heat a cauldron with vegetable oil and add the diced onion. Reduce the heat to medium and sauté for about 3-4 minutes.
- 3
Step 3

Cut the meat into small cubes or strips, but don't make them too small. If the pieces are too large, they will take longer to cook. On the other hand, if they're too small, they will turn into a puree in the sauce.
- 4
Step 4

By this time, the onion will be nicely browned; the main thing is not to forget to stir it. It should become soft and almost transparent with a golden crust.
- 5
Step 5

Place the sliced pieces of meat into a container. Do not add any liquid, as you first need to fry the pork and simmer it until the meat releases its juice.
- 6
Step 6

Add the prepared spices and seasonings. You can also add your favorite ones if desired. If their flavor unfolds quickly and may then be lost, it's best to add such spices at the end of cooking. Common universal seasonings can be added at the beginning.
- 7
Step 7

Sear the pork over high heat until a golden crust forms, then reduce the heat to medium. Simmer for 15 minutes, until the meat releases its juices and the liquid evaporates.
- 8
Step 8

The ideal doneness for pork slices is a caramel color, which will also be transferred to the sauce. The meat itself is still somewhat tough in taste, so it needs to be simmered further.
- 9
Step 9

Pour in hot water, add bay leaves (if you like their aroma).
- 10
Step 10

Simmer the meat in the sauce, covered, for about 20 minutes.
- 11
Step 11

Place the pork gravy into a bowl or soup plate, serve over mashed potatoes or pasta, and enjoy warm. Bon appétit!
