
Gravy for chicken cutlets
Description
Peel the tomatoes, chop them finely, then transfer to a saucepan along with orange juice, olive oil, spices, and starch. Cook until thickened. Let the prepared sauce cool, pour into a sauce boat, and serve with chicken patties, or with other poultry dishes.

Lower the tomatoes into boiling water for 1 minute, remove the skin, and blend in a blender. Then strain through a sieve to remove the seeds.

Remove the zest from the orange (do not throw the zest away; you can bake a cake with it if you wish). Cut the orange in half and squeeze out all the juice.

Pour orange juice into tomato puree, add olive oil, lemon juice, sugar, salt, and a mixture of peppers. Add the pepper mixture to your taste—I like spicy and hot sauces, so I add a lot. Dilute the starch in a small amount of cold water and pour it into the mixture.

Place the saucepan with the sauce over heat, bring to a boil and simmer, stirring, for about 5 minutes until thickened. If desired, you can add a little garlic to the sauce, but only a very small amount.
