
Baked Pork Belly

1. Prepare the ingredients—let’s get started! Wash the pork belly well; whether to remove the skin is a matter of taste—if it’s tender and hair-free, leave it on. If you don’t like it, it’s better to remove it.

2. Prepare marinade No. 1: crush the garlic with a press, and grind the coriander and black pepper in a mortar. Mix. Salt to taste; I use a level teaspoon, scraping off the top with a knife.

3. Rub the pork belly well with spices. Set aside for now.

4. Prepare the spice blend for the second marinade. Mince the garlic and mix the spices.

5. Rub the second piece of pork belly well with spices. Roll both pieces into a roll, tie with string, and refrigerate overnight.

6. Place both rolls on a baking sheet. I bake on parchment, but you can also use foil (wrap the pork belly or cover with foil). Put in the oven and bake for 30 minutes at 200°C, then 30 minutes at 180°C. For the last 10–15 minutes, you can open the foil and brown the fat.
