
Marinated birch boletes
Description
A simple way to prepare ahead for later. With this recipe you always get very tasty marinated birch boletes; the recipe is universal and works for marinating other kinds of noble mushrooms. Serve at the table or store in the pantry.

1. Clean the birch boletes. Rinse them under cold running water and drain in a colander until dry.

2. Cut the mushrooms into large pieces. Small ones can be left whole.

3. Bring the water to a boil. Add the mushrooms and a little vinegar (to keep them from darkening). Simmer for about 7 minutes.

4. Drain the mushrooms in a colander and rinse.

5. To make the marinade, pour 1 liter of water into a saucepan and add salt, sugar, vinegar, pepper, and cloves. If desired, you can add 1 bay leaf. Boil the marinade for 2–3 minutes.

6. Then add the mushrooms to the marinade, bring to a boil, and boil for 10 minutes.

7. Transfer the mushrooms into sterilized jars, pour in the marinade, and screw on the lids. Store in a cool place.
