
Almost macaroons
Description
An original dessert option for a celebration could be Wacky "Whoopie Pie" cookies — American red-colored sponge cakes filled with creamy buttercream. They are very similar to traditional macaroons and are just as delicious. You can use any food coloring (preferably gel-based) to give the batter an attractive color, or you may leave it chocolate-flavored. Use a toothpick to check for doneness, so as not to overbake the cakes.

1. First, add lemon juice to the milk and let it sit for 10 minutes to allow the reaction to occur. Sift the flour together with baking powder and cocoa, then add salt. Mix well.

2. Mix the sugar with the butter using a mixer, starting at a low speed. Add the egg and vanillin, and mix well again.

3. Gradually add the sifted flour and milk in parts, mixing until smooth. If desired, add food coloring to achieve the desired color.

4. Transfer the dough into a plastic bag with one corner cut off, and pipe small circles onto a baking sheet lined with parchment paper, spacing them apart. Bake in a preheated oven at 180°C for 10 minutes.

5. Prepare the frosting: using a mixer, blend cold cream cheese with butter and powdered sugar. Add vanilla flavoring if desired.

6. Using a pastry bag, pipe the cream onto the cooled cookies and sandwich them together. Sprinkle with confetti.
