
Pilaf in pumpkin baked in the oven
Description
This colorful dish can be served at a festive table. If you have small pumpkins on hand, you can prepare the pilaf inside them in just 40 minutes. The vegetable imparts its slightly sweet flavor to the rice, making the dish incredibly delicious and appetizing. This pilaf is especially tasty with lamb, but it should be served only hot.

Prepare the listed ingredients.

Rinse lamb meat or another type of meat, remove tendons and membranes, and cut into small cubes. The finer the meat is chopped, the faster it will cook inside the pumpkin. Rinse any type of rice, preferably parboiled rice. Combine meat, rice, seasoning, dried barberries in a bowl or dish and mix well. Add some chopped pumpkin flesh instead of carrots.

Remove the seeds from the pumpkin, being careful not to damage or pierce the bottom, then rinse it. Place the prepared filling inside the pumpkin. Peel the onion and chop it.

Add the chopped onion, place one or two unpeeled garlic cloves, and pour boiling water over them.

Cover with foil on top, place in a baking dish, then put in a preheated oven at 220 degrees for 1–1.2 hours.

After the specified time, remove the foil and let the pilaf bake for about 5 minutes until a golden crust forms.

Serve the pilaf right in the pumpkin, accompanied by sour cream, mayonnaise, or other sauces.
