You can use a variety of vegetables to prepare this pilaf, including frozen vegetable mixes! However, I prefer the classic combination: onion, carrot, garlic, corn, green peas, and bell pepper.     Rinse the rice thoroughly under plenty of running water. Since vegetables cook much faster than meat, it's better to soak the rice in water for at least an hour—it will absorb moisture and reach the desired consistency faster ;)

    Peel the onion and cut into cubes.

    Carrots - cut into cubes or small strips.

    Remove seeds from the pepper and cut into strips or squares.

    Open the peas, drain the liquid.

    Do the same with the corn.

    Heat a pan with oil and sauté the carrots over medium-high heat. Add salt and sprinkle with spices.

    Add the onion and sauté until it becomes translucent. Add the remaining vegetables, mix and heat through. Add the rice.

    Insert garlic, add salt and spices. Pour hot water over it—enough to cover the rice by 1-2 fingers. Simmer, covered, over low heat until the rice is cooked. Stir before serving. Vegetable pilaf is ready - :)
