Mung Bean Pilaf

Description

The recipe won't take much time. You should try cooking pilaf with mung beans at least once. The dish turns out not only filling and delicious, but also healthy. You can use any meat you like; today I'm making pilaf with pork ribs. Serve hot.

    Prepare all the ingredients.

    Soak the mung beans in cold water for several hours, preferably overnight.

    Pour oil into a cauldron or any heavy-bottomed pot, heat it until very hot, then add the meat. Sear the meat, stirring occasionally, until it develops a golden-brown crust.

    Meanwhile, slice the onion into feathers or half-rings.

    Cut the carrots into small julienne strips.

    Add the chopped onion to the meat, and fry together until golden brown.

    Add the sliced carrots and continue frying for another 7-10 minutes.

    Then add water so that it barely covers the meat, salt to taste, spices, and simmer over low heat for about 20 minutes.

    Add the washed mung beans.

    And continue simmering for another 20 minutes.

    Add the washed rice, peeled garlic cloves, salt to taste, spices, mix and add boiling water so that it covers the grains by 1 cm.

    Cook over high heat until the rice is half-cooked, then gather everything toward the center, cover with a plate, place the lid back on, and simmer for another 10–15 minutes (until fully cooked). The rice with mung beans is ready.
