
Pilaf with apricots and raisins

If all you have for dinner is a little meat broth, a cup of rice, some onion and garlic, a handful of dried fruits, and spices—don't despair! This simple recipe for pilaf with apricots and raisins will help you feed your hungry family to their heart's content! :) Despite the lack of meat, thanks to the broth, the pilaf turns out excellent—rich, aromatic, and delicious. I personally like the vegetarian version of this dish (without broth) less, but as they say, "tastes differ." Besides, this pilaf is an ideal option for those on a diet or fasting. So, keep this recipe in mind!

Pour hot water over dried apricots. Once swollen, drain the water, squeeze out the excess moisture, and slice thinly into strips.

Peel the onion and finely chop it.

Heat a frying pan with oil.

Sauté the onion over medium heat until translucent.

Rinse the raisins with warm water.

Add the chopped garlic and dried apricots to the pan with onions. Sauté, stirring, for 1-2 minutes, then add the rice and sprinkle the raisins on top. Pour in the broth, season with salt and spices, and cook over low heat, covered, until the rice has absorbed all the liquid.

Stir the cooked pilaf and serve it hot. Of course, you can use it as a side dish, but believe me, this pilaf with raisins, dried apricots, and spices is absolutely satisfying on its own :)
