
Pilaf with apricots

Rinse the rice with cold water, add 2 tablespoons of salt, and let it soak for about 2 hours.

Cut the meat into small cubes.

Cut the carrots into thick julienne strips or half-rings, and also cut the onion into large pieces.

Rinse the apricots thoroughly and cut them into cubes.

Pour a little oil into a cauldron and sauté the pork until golden brown. Add the onion and carrot, and sauté lightly as well. Put the apricots into the cauldron, add salt and spices, and sauté everything together for 5 minutes.

Then we place the rice on top of the vegetables and apricots, spreading it evenly with a spoon. We pour water over the rice until it rises 1.5-2 cm above the rice, and place a whole unpeeled garlic head, washed, in the center of the pot. We tightly cover the pot with a lid and simmer over low heat for 45-50 minutes.
