This pilaf recipe with garlic originates from Uzbekistan, where it is considered one of the traditional dishes. Personally, I absolutely love it and often prepare it for my family. In my opinion, this method of cooking pilaf is the most successful and yet quite simple. Just look: there are minimal ingredients, only what's necessary, spices are perfectly chosen, and together they create an amazing flavor and aroma. For these reasons, among many ways to cook pilaf, I always choose this simple garlic pilaf recipe—and my family fully supports me.     For this pilaf, you can use absolutely any rice; before starting to cook, it must be rinsed several times under cold water and allowed to dry slightly.

    In a cauldron or a thick-walled pot, heat the oil or render the fat, then sauté the chopped onion until browned.

    Cut the meat into cubes about 3 centimeters in size and place it in a pot, fry until a crust forms.

    Next, add the carrots cut into julienne strips and a whole head of garlic, and fry for a few more minutes. Be sure to remove the outer layer of skin from the garlic beforehand.

    Pour in water so that it completely covers all the ingredients. When the liquid comes to a boil, add spices and salt. Reduce the heat and simmer for 50–80 minutes, adding water if necessary.

    Now add the rice and spread it evenly over the entire surface. Carefully pour in water so that it is 1.5-2 centimeters above the rice. Taste for salt and spices, adjusting if necessary. When the liquid comes to a boil, cook the pilaf over medium heat until the water evaporates. Then reduce the heat to low, gather the rice from the sides toward the center into a mound, so that the garlic is inside, cover the pot with a lid, and continue cooking for another 20-25 minutes.
