Anise Pilaf

    Rinse the rice, then transfer it together with the currants to a bowl and let it sit. Finely chop the onion and carrot. Slice the onion thinly and cut the carrot into strips.

    Place about 20 grams of lamb fat (can be substituted with vegetable oil) into a wok. Add the onion and fry in the rendered fat until golden brown.

    Then add and sauté the anise, cumin, coriander, and chili pepper. Add another 20 grams of fat (or butter) and the carrots. Sauté, stirring constantly, until soft and golden.

    Now cut the meat into pieces. Generously season them with spices, first sear in a skillet over high heat until browned, then transfer to the oven and cook for 2 hours at 140-150 degrees. The meat should develop an appetizing crust on all sides.

    Now sauté the onion and garlic in a large amount of oil. Add anise, chickpeas, raisins, and rinsed rice to the pan. Mix everything and fry for a few minutes.

    As soon as the broth comes to a boil, add all the remaining ingredients, in particular, the meat from the oven, and simmer over very low heat.
