Instructions

Step 1

1. Unusual, but we'll be making pilaf from beef. I usually take about a kilogram of meat and cut it into cubes.
- 2
Step 2

2. Pour in a little vegetable oil and place the meat into the pan. Use a pot with a thick bottom and thick walls for the pilaf. Fry the beef until the liquid has completely evaporated.

Step 3

3. Fry the carrots separately. For this pilaf, I slice them by hand, slightly thicker than usual.

Step 4

4. Add the carrots to the meat and sauté for a few more minutes over low heat. Season with salt and spices to taste. Eastern herbs and spices are essential for this pilaf.

Step 5

5. While the meat and carrots are frying, rinse the rice thoroughly.

Step 6

6. Sprinkle the rice on top and pour water over it, making sure the water covers the rice by two centimeters.

Step 7

7. Simmer over low heat until done, adding a whole unpeeled garlic clove halfway through. Add all spices to taste, and just before serving, add raisins and prunes.
