
Rabbit pilaf
Description
The recipe won't take much time. Generally, I don't use rabbit meat very often in other dishes, but I occasionally make this rabbit pilaf at home because everyone in my family absolutely loves it. I think pilaf made with rabbit turns out even tastier than with lamb or beef, as the flavor becomes more delicate and tender—this is just my personal opinion. And since the method of preparing rabbit pilaf is just as easy and simple as the traditional one, I recommend you try making this dish soon. I hope you'll enjoy it. Serve hot.

First, we thoroughly rinse the rice and cover it with water (up to 4/5 of the way), then let the rice sit for a couple of hours.

Peel the vegetables, cut the onion into small pieces, and slice the carrots into strips.

Remove the outer layer of skin from the garlic cloves, slice 1-1.5 onions into rings, and tie the parsley stems with string.

Rinse the rabbit meat thoroughly, separate the meat from the bones, and cut it into small pieces.

Pour vegetable oil into a cauldron (or any other thick-walled cookware) and heat it. Add the onion cut into rings to the oil.

Fry the onion until it turns dark brown, then carefully remove it from the cauldron and discard.

After that, add the rabbit meat to the cauldron, sprinkle with spices, salt, and fry for 15–20 minutes.

Then move the rabbit meat to the edges, leaving an empty space in the center, and place a layer of sliced onions on the meat.

On top of the onion, place the sliced carrots, spreading them around the sides while leaving the center empty.

In the same way, place an even layer of pre-soaked rice on the sides, and put parsley stems and garlic heads in the center.

Pour water into the hole in the center so that it completely covers the rice, adding salt if necessary. Cover the cauldron with a lid and cook the pilaf over low heat for an hour; if the water evaporates earlier, add a little more.

After the time has elapsed, remove the pot from the heat and let the pilaf stand, covered, for another 10 minutes. Then uncover and stir the contents of the pot. Enjoy your meal!
