
Pelmeni with cumin
Description
The dish is prepared without unnecessary complications. You can use any meat for pilaf, such as chicken, pork, beef, and of course lamb. You can add any spices to taste, as well as fruits, dried fruits, and nuts. It is important not to overcook the pilaf so that it remains fluffy. Serve it hot, and in many countries it is even eaten by hand. The ready dish can now be served.

Peel the onion and chop it coarsely. Wash the meat and cut it into 5x5 cm pieces. Peel the garlic and mince it.

Heat a cauldron with 70 milliliters of vegetable oil and add the onion, frying for 5 minutes.

Then add the meat and garlic to the onion, mix and cook for another 10 minutes.

Pour water into the meat, reduce the heat after boiling, and cook under a closed lid for 1.5 hours, then transfer the meat to a plate.

Place half of the sugar into a dry skillet, constantly shake the skillet, and cook for 5 minutes.

Pour 250 ml of the broth in which the meat was cooked into the sugar, add all the spices, salt, and cardamom; as soon as the mixture comes to a boil, immediately remove it from the heat.

Rinse the rice thoroughly, boil it in a separate pot for 5 minutes after boiling, then immediately transfer the rice to a cauldron. Pour the prepared sugar and spice mixture over it.

Add the carrot cut into strips to the same pan where you cooked the sugar and spice mixture, stir and cook for 3-5 minutes.

With a spoon, make deep holes in the rice, then add carrots, meat, raisins, and nuts. Cover the pot with a lid, place it over high heat, cook for 5 minutes, then reduce the heat to the lowest setting and simmer for another 10 minutes.

Remove the pot from the heat and do not open the lid for another 10 minutes. Take out the meat with carrots and transfer it to a separate plate, and in the meantime, stir the rice.

When serving, place a small amount of rice, then the meat, and cover it with rice again.
