Lamb pilaf with tomatoes
Description
The recipe won't take much time. Of course, I know that the traditional recipe has a slightly different composition, but don't rush to judge until you've tried making this lamb pilaf with tomatoes at home yourself. In fact, tomatoes fit this dish perfectly and essentially replace tomato paste, which some cooks often add to pilaf. The main thing is to use juicy and meaty tomatoes—then the dish will turn out absolutely delicious, I promise. Otherwise, this lamb pilaf with tomatoes recipe is very simple, and everyone can easily prepare it. Serve hot.
Instructions
- 1
Step 1

First, we heat a little vegetable oil in a deep, thick-walled pot, then add grated ginger, minced garlic (3 cloves), and half an onion finely chopped. Fry, stirring, until golden brown.
- 2
Step 2

Rinse the lamb and cut it into small pieces. Place the meat in a pot and fry over medium heat for 5 minutes. Then add spices to the meat, salt it, and simmer the lamb over low heat for half an hour, adding a little water if necessary.
- 3
Step 3

While the meat is stewing, we peel the carrots and cut them into strips.
- 4
Step 4

Rinse the rice thoroughly in several changes of water.
- 5
Step 5

Cut the tomatoes into small cubes.
- 6
Step 6

After the meat has simmered for half an hour, we increase the heat to medium and add the tomatoes to the pot, then mix everything.
- 7
Step 7

Dice the remaining onion into small cubes and add it to the pot as well; do not mix.
- 8
Step 8

On the onion, place a layer of carrots, which can be slightly salted and peppered.
- 9
Step 9

After that, we add the washed rice to the pot, spread it evenly over the entire surface, and level it.
- 10
Step 10

Pour water into the pot so that it rises 1-2 cm above the rice, add salt to taste, and add the spices.
- 11
Step 11

Cook the rice over low heat, and when the top layer of liquid is absorbed, insert whole garlic cloves into the rice and cover the pot with a lid.
- 12
Step 12

After about 15 minutes, open the lid and make small holes in the pilaf to let the steam escape. Then cover the pot again and cook the pilaf for another 20 minutes.
- 13
Step 13

When the dish is ready, we remove the garlic cloves and mix everything.
- 14
Step 14

Serve the delicious pilaf on plates and bring it to the table. Enjoy your meal, everyone!
