
Pilaf without water
Description
It's quite easy to prepare pilaf without water at home by using chicken broth and milk. This substitution is not just an acceptable alternative, but also a very successful option that gives the dish a unique flavor.

1. Slightly heat the milk and add saffron to it. Melt butter in a skillet and add bay leaf, anise, cardamom, and black peppercorns.

2. Peel the onion and slice it thinly into half-rings, peel the garlic and mince it. Add to the pan together with the chili pepper and sauté for a couple of minutes.

3. Wash the chicken breast, dry it, cut into medium pieces, and add to the pan. Fry for a few minutes, season with salt to taste, then add plain yogurt. Mix thoroughly. In the recipe for pilaf without water, sour cream can also be used. Simmer over medium heat, stirring occasionally.

4. Add rice and pour in the saffron milk. Stir, then add salt to taste and a little ginger. Add some broth until the liquid covers the rice. You can enhance the classic pilaf recipe without water by adding fresh herbs or mint. Cover with a lid and simmer over low heat.

5. When the rice has absorbed all the water, turn off the heat, but let the pilaf steep for another 30-40 minutes. Then the dish can be served.
