
Pilaf without carrots
Description
The dish is prepared without unnecessary complications. This cooking method comes in handy if someone absolutely refuses to eat dishes with carrots or if you happen to have everything on hand except carrots. What to do? Make pilaf without carrots! Of course, it won't be authentic Uzbek pilaf, but it will still be very delicious! What does carrots contribute? Carrots enrich the pilaf with aroma and natural sugars. Therefore, if you need to cook this dish without this wonderful orange root vegetable, simply replace it with raisins or quince. I suggest adding a bit of sugar. Besides rice, you'll need a good amount of meat and onion, plus a few spices for a rich, flavorful taste. Serve the finished dish immediately.

Prepare all the ingredients.

Pour oil into a cauldron or a heavy-bottomed frying pan and heat it until very hot. Add the onion cut into half-rings.

Sauté the onion until golden brown.

Add the meat cut into medium pieces.

Season the meat with salt to taste and cook over high heat until a light browned crust forms.

Add hot water, sugar, spices, and salt (the zirvak should be slightly salty, taking the rice into account). Simmer the meat over low heat, covered, for 20–30 minutes after boiling.

Then add the peeled garlic cloves, you can leave them in their skins (but first remove the outer layer).

Add the washed rice. Spread it evenly on top without stirring. Add a little water so that it is 1 cm above the rice, cover the pot with a lid, and cook over medium heat until the rice is half-cooked. As soon as all the liquid is absorbed, gather the rice into a mound in the center, cover it with any suitable plate, then with the lid again, and cook over low heat for another 10 minutes.

The pilaf without carrots is ready. Stir it before serving and, if desired, add fresh herbs.
