Prepare the ingredients for the dough. Dissolve the yeast and 1 tbsp sugar in 1/2 cup of milk, set aside in a warm place until a foamy cap appears.

Sift the flour into a bowl and make a well in the center. Pour in the risen yeast, milk, sugar, add the egg, and stir. Add salt and knead a sticky dough. Cover the bowl with a linen towel dampened with hot water, place it in a warm spot for 40 minutes.

Combine softened butter, almond flour, sugar, nutmeg, cinnamon, and cardamom in a bowl. Mix until smooth.

Knead the risen dough. Prepare the remaining ingredients.

Dust the work surface with flour. Roll out the dough into a rectangular sheet 0.5 cm thick. Spread the filling evenly over the entire dough. Cut the dough with filling into small strips of equal width. Roll them up into a spiral.

Then shape into a snail coil. Place the pieces on parchment greased with butter. Beat the egg and milk together until smooth, and brush the pieces with the mixture. Sprinkle almond flakes on top. Bake in a preheated oven at 180 °C for 15–20 minutes.
