
Pljeskavica
Description
The recipe won't take much time. Essentially, pljeskavica is a patty made from several types of ground meat and has a flat shape. I'll be using three kinds of minced meat at once: beef, pork, and veal. You can use whichever ground meat you prefer, as there are "a thousand and one" ways to prepare this dish. The most important part of making authentic pljeskavica is marinating the meat, just as we usually do when preparing meat for shashlik. The ground meat is mixed with finely chopped onion and marinated for several hours in the refrigerator. Serve hot.

Mix both types of minced meat with the veal. Finely chop the onion and add it to the meat mixture. Season with salt, pepper, and paprika. Knead the meat mixture thoroughly so that the pljeskavice don't fall apart during frying.

Place the minced meat in the refrigerator for several hours. It needs to marinate.

After the meat mixture has marinated, take it out of the refrigerator and, with wet hands, shape it into patties. Traditional pljeskavica is round and flat, so I suggest sticking to tradition and forming it into a disc shape.

After making all the patties, place them on a tray, cover with plastic wrap, and refrigerate for another hour.

Preheat a grill pan (or regular pan if you don't have a grill) and cook the pljeskavice over medium heat for about 5 minutes on each side, until golden brown. Serve sliced in pita bread with vegetables.
