
Grilled lamb shoulder
Description
Properly grilled lamb shoulder is incredibly delicious. The meat should be fresh, and it's best to roast the shoulder over low heat. I recommend marinating the lamb shoulder in rosemary, garlic, chili, and honey for at least overnight, or even better—24 hours.

1. Soak the chili in a bowl of water.

2. Peel the garlic, rinse the rosemary. Chop the rosemary and garlic finely with a knife.

3. Rub the shoulder with chopped garlic and rosemary.

4. When the chili softens, chop it as well.

5. Mix the chopped chili with honey.

6. Brush the lamb shoulder with chili honey.

7. Wrap the shoulders in a plastic bag or cling film and refrigerate overnight to marinate.

8. Roast the lamb shoulder over low grill heat for 90 minutes, turning it over without piercing the meat.
